dc.description.abstract | El sistema de comercialización de trigos establece una clasificación de los trigos
hexaploides (Triticum aestivum L.) basada en la textura del endosperma que junto con la
fuerza del gluten determinan sus potenciales usos industriales. Estos factores se encuentran
parcialmente
bajo
control
genético
pudiendo
ser
manipulados
a
través
del
fitomejoramiento. El objetivo de este trabajo fue evaluar la influencia de la textura del
grano sobre los parámetros de calidad y su efecto en la elaboración de galletitas dulces y
crackers. Se estudiaron isolíneas de textura de grano blanda y dura utilizando dos fondos
genéticos contrastantes: Buck Poncho (BP), variedad de textura dura (D), gluten fuerte,
del tipo corrector y Penawawa (P), variedad de textura blanda (B) y gluten débil. Se
determinaron 39 parámetros de calidad físicos químicos, reológicos y elaboración de
galletitas dulces y crackers. Para cada variable se realizó análisis de varianza tomando
como fuente de variación el fondo genético (FG), la textura de grano (TX) y su interacción.
FG y TX mostraron influencia en la mayoría de los parámetros de calidad estudiados. El
FG de BP mostró mayores efectos con el cambio de textura que P; en general la
incorporación de genes B sobre FG de BP no fue suficiente para llegar a los valores de
calidad galletitera de P. Mediante componentes principales se confirmó la existencia de 3
conjuntos de líneas: aquellas provenientes de P y las de BP-D y BP-B separadamente. Las
líneas de BPD presentaron valores más altos de dureza (DZA), Fuerza panadera (W),
relación tenacidad/extensibilidad (P/L), gluten húmedo, SRC Carbonato y SRC Agua
indicando la importancia de la composición proteica y de la dureza del grano en la fuerza,
contenido de almidón dañado y la absorción de agua de una harina en la definición de la
calidad y potencial uso final. En general PB tuvo buen comportamiento en galletitas dulces
y crackers, PD se asoció a una buena performance de galletitas crackers y BPD y BPB a
mala calidad en de galletitas dulces y crackers. Se desarrollaron ecuaciones para estimar
diámetro de galleta (DG) y Peso de 10 crackers sobre alto de 10 crackers (P10/A10) a
partir de los parámetros SRC, mixograma y alveograma. Los SRC resultan de gran utilidad
predictora debido a su simplicidad, bajo costo y requerimiento de poca cantidad de
muestra. | es |
dc.description.abstract | The wheat marketing system provides a classification of hexaploid wheat (Triticum
eastivum L.) based on the endosperm texture. Texture and gluten strength determine wheat
potential industrial applications. The expression of these factors is partially under genetic
control and can be manipulated through breeding. The aims of this study were to evaluate
the influence of grain texture in quality parameters and its effect on the production of
cookies and crackers. Isolines with soft and hard grain texture were studied using two
contrasting genetic backgrounds: Buck Poncho (BP), a hard texture (D) variety with strong
gluten and corrector type and Penawawa (P), a soft texture variety (B) with weak gluten.
Quality evaluation was carried out using 39 physical, chemical, rheological and production
of cookies and crackers parameters. Variance analysis taking as a source of variation
genetic background (FG), grain texture (TX) and their interaction (FG * TX) for each
variable was performed. Both FG as TX showed influence in most of the studied quality
parameters. The FG of BP showed greater effects on texture change than P, but generally
incorporating soft genes TX on BP FG was not enough to reach similar values of P cookie
quality parameters. Principal components analysis confirmed the existence of three sets of
lines: one coming from P and the others from BP-D and BP-B separately. BPD lines had
higher hardness values (DZA), alveogram parameters (W) and ratio tenacity / extensibility
(P / L), wet gluten (GH), SRC Carbonate and SRC Water indicating the importance of both
protein composition and grain hardness in strength, damaged starch content and water
absorption of flour in the definition of wheat quality and their potential end use. PB
generally had good behavior for both cookies and crackers, PD was associated with a good
performance for crackers and BPD y BPB were associated with poor quality for cookies
and crackers. Equation models to estimate cookie diameter (DG) and the relation of the
weight of 10 crackers over the height of 10 crackers (P10 / A10) from SRC parameter,
alveogram and mixogram separately were developed. The SRC is a very good predictive
method due to its simplicity, low cost and small amount of sample requirement. | en |
